COCKTAIL

White Cranberry Mimosas (Poinsettia)

White/Cranberry Mimosas
  1. prosecco 
  2. white or regular cranberry juice
  3. fresh or frozen cranberries
  4. 1 sprig of rosemary

Variation – Pomegranate Mimosas

  1. Prosecco 
  2. Pomegranate juice
  3. Orange or lemon slice
  4. Fresh pomegranate 

Method 

  1. Rim champagne glass with a slice of orange and coat with sugar
  2. Put cranberries/pomegranate at the bottom of the glass
  3. Add desired juice amount
  4. Fill with Prosecco 
  5. Complete with rosemary sprig

APPERTIZER

Everything But the Bagel Dip

Bagel Dip
  1. 1 80z cream cheese at room temperature 
  2. 1/4c sour cream
  3. 2 scallions chopped
  4. 1 tsp sesame seeds
  5. 1/2 tsp poppy seeds
  6. 1/2 tsp minced dried onions 
  7. 1/2 tsp garlic powder
  8. Or 3 tsp the Everything But the Bagel Seasoning 
  9. Salt & Pepper to taste

Method

  1. Use a food processor to combine cream cheese and sour cream until smooth. 
  2. Add the majority of the scallions leaving some for garnish & seasonings to just combined.
  3. Season with salt and pepper 
  4. Serve with crudites or fresh vegetables.

SIDE DISH

Paw Paw Casserole

Paw Paw Casserole 

Ingredients

6 medium to large paw paws
1 large onion sliced in half moons or chopped
3 cloves of garlic
1 can petite diced tomatoes (optional)
1 1/2 pound of cheese 1lb for the sauce and the rest for the topping
1/2 C real butter
1/2 C flour
4 C milk or heavy cream
2 TBS mustard
Garlic powder
Onion powder
Caused red peppers
Salt and pepper to taste.
Breadcrums optional

Method

  1. Peel, clean and slice pawpaws evenly
  2. Boil until tender in salted water
  3. Drain pawpaws once done and set aside.
  4. In the same pot melt butter until foamy and bubbly and fry onions and garlic until soften Do not burn or brown butter. If so start again.
  5. Add flour and mix until fully absorbed by the butter. Allow to cook over medium heat until foamy.
  6. Add milk slowly and whisk to remove any lumps. Cook until it starts to thicken
  7. Remove from heat and slowly add cheese until fully melted. Too much heat will curdle the sauce.
  8. Add drained tomatoes if using. Then season with all of the seasonings. Taste and adjust as needed
  9. Add pawpaws to the sauce and stir until combined and pour into buttered pan.
  10. Cover with remaining cheese and breadcrumbs
  11. Bake at 350 degrees covered with foil for 45 minutes the uncovered until cheese is melted and lightly brown.
  12. Let set for 20 minutes before eating.
