Vegan – Savory Recipe

Don’t know what to do with all your leftover vegetables? Why not make a Plant Based casserole!

This vegetable casserole recipe is a fantastic way to encourage your family to eat more veggies. Even the vegan cheese sauce is made out of vegetables.

You will get the vegetables onto your table and into the bellies of your little ones.

Casseroles are not only easy to make, but you can freeze in an airtight container.

Create healthy eating habits by offering lots of vegetables and cook with fresh ingredients. Your meals will be tastier, super nutritious, and you will feel great about giving your family good food.

All you need to get started is to gather your vegetables together. I made mine with broccoli, cauliflower, carrots, and spinach.

This easy homemade vegan cheese sauce is creamy and made with easily available ingredients potato, cauliflower and carrots! The carrots give it the right amount of sweetness and that pretty orange color.

Plant Based Vegetable Casserole ready in about 30 minutes and made in 1 pan!

  • 2 cups broccoli
  • 2 cups cauliflower
  • 4 carrots
  • 1 large potato
  • Bag of Spinach
  • 3/4 cups of nutritional yeast
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 13.5 ounce can of coconut milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon cornstarch
  • 1/2 cup breadcrumbs, optional

Preheat oven 350 degrees.

Wash and peel and chop vegetables, (anyway you desire) then add chopped potatoes, carrots and cauliflower to a large pot then pour over enough water to cover by 1″ inch. Season with a generous pinch of salt and bring the water to a boil over medium-high heat.

Boil for 15 minutes or until potatoes and carrots are soft when stuck with a fork. Put broccoli in a colander and use the same pot where the veggies are boiling making sure the water doesn’t touch the it. Steam the broccoli for 3-4 minutes, or just until fork-tender.

While veggies are boiling add all other ingredients to a blender.

Once done, drain veggies and add potatoes and half the carrots directly in the blender. Blend on high until silky smooth.

Place remaining cooked vegetables into a casserole dish with spinach on top. Pour creamy sauce over vegetables. Top with bread crumbs (blended leftover bread, optional) Bake until golden brown on top.

Serve warm and enjoy!
